VANILLA-STRAWBERRY CAKE


If you desire bake a cake that is so light, extremely soft, aromatic and moist, you just found the recipe! It's vanilla batter and strawberry topping, the perfect pair for an afternoon snack.






3 large eggs in room temperature
90g sugar
100g cake flour
2 tsp baking powder
20g butter, melted
2 tbsp milk
1 tsp vanilla extract

Strawberry Topping
200g strawberry, coarsely chopped
50g sugar

Directions
Preheat the oven to 340˚F. Lightly grease and flour a 22cm round cake pan. Sift together cake flour and baking powder.
Beat together the eggs and sugar in high speed for 10 minutes, until double in volume. Turn to low speed and beat for more 2 minutes. Gently, fold in the cake flour and baking powder with a spatula. In another bowl, mix 1/3 of batter with melted butter. Fold this mixture in the remaining batter. Add milk and vanilla extract and mix gently.
Pour the batter into the pan and bake for about 30 minutes, or until a toothpick is inserted comes out clean. Let to cool in the pan for 5 minutes, remove from pan and let to cool in a rack for 10 minutes, invert onto rack and let cool for more 10 minutes.

Strawberry Topping
Heat the chopped strawberries and sugar together. Let to cook just until slightly disassemble. Pour the hot topping over the cake.

Serve: 8 portions.

CAN I FREEZE EGG?

You can, paying attention. Whole eggs in the shell can't be frozen, even boiled eggs. To freeze whole eggs, you need to take it of from shell, whisk slightly with a fork and a pinch of salt or sugar.
Egg whites can be frozen without care, but yolks must to be slightly beaten with a little salt or sugar. You can put the eggs into ice molds, it'll be easy to use. Don't forget to label indicating how much sugar or salt was used to each egg.
To defrost just leave in the fridge.

Durability: 12 months.

PEPPER-PROVOLONE BISCUITS


Biscuit is a cookie usually made with butter, milk and baking powder or soda. It can be sweet or savory and always is delicious! We baked a Provolone biscuit that is great for breakfast. You can prepare the day before, freeze and bake in the early morning for your family. Wake up with aroma of cheese and fresh coffee is invigorating!






350g flour
1 tbsp sugar
3/4 tsp salt
2 1/2 tsp baking powder
1 1/2 cup finely grated sharp Provolone cheese
100g chilled butter, cut into small pieces
1 large egg
150ml buttermilk
3 tsp finely chopped pepper

Directions
Preheat the oven to 425˚F.
Sift together flour, sugar, salt and baking powder. Add grated cheese and whisk very well. Rub with your fingertips the butter. Add egg, buttermilk and pepper. Knead just until incorporate. Roll out the dough between two plastics and cut with a round cutter.
Bake for 20-25 minutes until is golden brown.

Cook's Tip: Use fresh or dried pepper.

Serve: 15 biscuits

SANDWICH COOKIES


There's no way to be different, kids always ask for it and adults never refuse one when the package is opened. The reason is so simple, the sandwich cookie is delicious! Have you tried to bake it? This is a great recipe, no preservatives, it's fragrant and the chocolate filling isn't just grease.







100g butter
200g sugar
1 egg
2 tsp vanilla extract
250g flour
3 tbsp milk powder
1/2 tsp baking powder

Filling
100g milk chocolate for coverture (fractionated)
1 tbsp half and half
3 tbsp milk powder

Directions
Beat together butter and sugar until is fluffy and pale. Add egg and vanilla extract and beat very well. Fold in flour, milk powder and baking powder and beat in slow speed just until is incorporated. Cover the dough with a plastic and let to chill for 15 minutes.
Preheat the oven to 350˚F.
Roll out the dough between two plastics and place without cut onto a baking sheet lined with waxed paper. Bake until is set, for about 10 minutes, cut into squares when is easy to remove from paper. Bake for more 5 minutes until is lightly golden brown. Let to cool on a rack.

Filling
Melt chocolate in microwave or double boiler. Stir in half and half and milk powder. Let to cool slightly before fill the cookies.

Cook's tip: If the filling is too set, melt again in microwave for a few seconds.
Fill a little time before eat for a crunchier cookie.
You can use fractionated chocolate or another of your preference.

Serve: 30 cookies.

STRAWBERRY MUFFINS


Muffin is the most convenient way to eat cake, it's presented in individuals portions and comes with a paper cup to hold crumbs those persist in falling. Goes well anytime and occasion. These strawberry muffins are perfect when you feel a little hungry between meals, for kid's snack at the school, a bite to eat at the work or even in breakfast. They're light, soft, nutritive and the topping has a infant's taste.








Streusel Topping
50g chopped almond
4 tbsp brown sugar
3/4 cup farine lactée
1/4 cup quick oats
20g butter

Muffins
200g flour
2 tsp baking powder
1/4 tsp baking soda
2 eggs
100g sugar
30g butter, melted
100ml buttermilk
5 strawberries, chopped

Directions
Topping
Mix together the dry ingredients and rub in butter.

Muffins
Preheat the oven to 350˚F. Sift together flour, baking powder and baking soda.
Whisk the eggs with sugar, just until combined. Gently, whisk in melted butter. With a spatula, fold in sifted ingredients, do not over mix. Fold in chopped strawberries.
Spoon the batter into muffin cups, leaving about 1 1/2 finger to complete the border, sprinkle the streusel with no press. Bake for 15-20 minutes.

Serve: 15 small muffins.

CHICKEN PIE


A very tasty pie with crunchy crust and lightly creamy filling. You'll need chicken, tomato, corn kernels, béchamel sauce, parmesan cheese... Get the ingredients and let's do it!






300g flour
3/4 cup cornstarch
1/2 tbsp baking powder
1 pinch of salt
100g cold butter, cut into cubes
1 egg
100ml cold milk

Filling
1 chicken breast, boiled and shredded
1 onion, diced
1 seedless tomato, diced
1/2 cup cooked corn kernels
250g béchamel sauce
2 eggs
100g creamy requeijão
3 tbsp grated Parmesan cheese

Directions
Sift together flour, cornstarch, baking powder and salt. Rub with your fingertips the cold butter. Add milk and egg, kneading just until is incorporated. Cover with a plastic and chill for 15 minutes.
Preheat the oven to 350˚F.
Roll out the dough and cover a 25cm round pan, pick with a fork and bake for about 20 minutes, until the dough is lightly golden brown.

Filling
Fry onion in a little oil. Add tomato and fry. Stir chicken, corn kernels and béchamel sauce. Cook a little more. Let to cool slightly.
In a bowl, whisk eggs, requeijão and Parmesan cheese. Stir chicken. Place the filling over the baked dough and let to bake again for 20 minutes or until the filling is set.

Serve: 10 portions.



CAN I FREEZE BLACKBERRY?

You can! This fruit should be freeze fresh or in purée. Wash the fresh blackberries, dry and freeze in plastics bags.
You also can simmer, crush and sift, freezing after this process. It'll be perfect in creams, mousses and ice creams.
