STRAWBERRY CHEESECAKE


A cheesecake's recipe with no secrets. It's just turn off the heat in the right moment and you'll have a delish dessert.






200g digestive biscuits finely chopped in processor
5 tbsp butter
1 tbsp cold water

Filling
300g cream cheese in room temperature
150g sugar
3 tsp vanilla sugar
2 eggs
200ml cream

Topping
Strawberry jam

Directions
Preheat the oven to 350˚F.
Rub the butter in the chopped biscuits until the mixture resembles bread crumbs. Add the cold water, if necessary a little more. Press the mixture into a 22cm round pan and bake for 10 minutes.

Filling
Beat the cream cheese with sugar until is fluffy. Add the eggs, one at a time, beating well after each addition. Add cream and beat a little more. Spoon the mixture into the baked dough and bake again in 350˚F for 15 minutes, turn to 300˚F and bake for more 30 minutes, when the cheesecake's center it doesn't yielding but it doesn't too firm is the moment to turn the heat off. Let cool in the oven for 1 hour to not crack on top. Cover with jam and chill.

    It's not really aesy to find cream cheese in France but when I go to Spain, I buy several boxes !!!
