CAN I FREEZE POTATO?

You can; taking some precautions. The raw potato can't be frozen 'cause it looses texture and flavor. Boil and mash the potatoes, making a purée. Store in an airtight container and freeze.
You can blanch potatoes cut into cubes. For that, cook the cubes in boiling water for 5 minutes, dip in cold water to stop cooking, wrap and freeze. To defrost just put in boiling water, cooking until is soft or use in the preparing dish, even frozen.
You can pre-fry the potato and freeze, then fry again or bake until brown. You can freeze as pre-boiled gnocchi, potato dumpling, fried potato.

Durability: Pureé, blanched potato, potato dumpling and gnocchi for 3 months. Fried and pre-fried potato for 6 months.
