COLORFUL OMELETTE WITH SAUSAGE, CARROT AND TOMATO


You don't have to limit the omelette just for breakfast. In Brazil, we eat it in lunch and dinner, with rice and beans. Try it as a main dish sided with mashed potatoes or a green salad.






70g cubed carrot
100g cubed smoked sausage
1/2 chopped onion
1 chopped garlic clove
1 diced tomato, seedless
2 large eggs
50ml milk
1 tbsp flour
Basil
Pepper
Salt

Directions
Lightly boil the carrot just until is soft, but al dente. Reserve.
In a skillet, fry in its fat the sausage. Add onion and fry until is transparent and soft. Fry a little the garlic. Add the tomato and turn off the heat.
In a small bowl, slightly whisk the eggs, milk and flour. Put this mixture over the fried ingredients in the hot skillet.
Brown one side, put the omelet in a plate and turn into the skillet to brown the other side. Serve immediately.

Serve: 2 portions.
