LIME-ORANGE FLUFFY CAKE


To prepare this cake you'll need just one bowl. No whipped egg whites, stir separately, heat the mixture, nothing about it. If you like to bake cake and want to keep it for few days, DO NOT bake this cake! It disappears really quickly!






4 large eggs, in room temperature
400g sugar
1/2 tsp salt
Zest of 1 lime
Zest of 1 orange
70ml canola oil
100ml orange juice
100ml lime juice
300g flour
1 heaped tbsp baking powder

Directions
Preheat the oven to 350˚C. Grease a 3,5 liters of capacity pan.
Beat eggs with sugar, salt and zest until is a pale cream and double in bulk. Add oil and beat for more 3 minutes. Alternately, add flour and juices, always beating in low speed. When the ingredients are ended, turn off the beater immediately. Gently, stir in the baking powder.
Spread the batter into the pan and bake for about 40 minutes just until a toothpick in the center comes out clean.

Serve: 18 portions.
