While writing this post I could almost smell the cake! The taste just came so vivid in my mind that I want to stop everything I'm doing right now and go bake it, but I need to share the recipe with you guys first!
I just want to go on record that I either like or drink coffee, but this cake is so delicious that I couldn't stop eating! Is soft and a little dense, it just melts in your mouth! So, does anybody want to give it a try?
100gr Unsalted butter, room temperature
190gr Sugar
1/2 tsp Salt
2 Large eggs, or 3 small
200gr All-purpose flour
15gr powered cocoa
150ml Cold, unsweetened coffee
20ml Rum
2 1/2 tsp Baking powder
Preparation
1. Preheat oven to 355°F. Reserve a rectangular 2 liter baking dish.
2. Cream butter and sugar. Add one egg at the time beating well after each addition.
3. Mix flour and cocoa together and add it to the butter mixture alternating with the coffe and rum. Beat just until incorporated. Add the baking powder and fold it carefully, do not over mix it.
4. Pour the batter into the reserved baking dish and bake for 30-40 minutes or until it passes the toothpick test.
Makes 18 servings.
Looks super moist and delicious . I wish i could have a bite.

Yummmm....mocha cakes used to be my all time favorite when I was a youngster, but the addition of that gorgeous rum makes it so grown up!
