Banana Muffins for a snack
It's exactly as the post's name said: a delicious muffin for an afternoon snack. You can use those so ripe spotty banana and combine them with cinnamon and chocolate chips to have this flavorful cake!
3 bananas, very ripe
2 large eggs (or 3 small)
2/3 cup oil
1 cup brown sugar
1 3/4 cup flour
1 tsp ground cinnamon
2 tsp baking powder
70g semisweet chocolate chips
Directions
1. Preheat the oven to 350˚F.
2. Mash well the bananas with a fork. In a bowl, whisk together the mashed bananas, eggs, oil and sugar. Sift over this mixture the flour, cinnamon and baking powder. Fold gently with a spatula. Fold in the chopped chocolate. DO NOT OVERMIX.
3. Bake for about 30 minutes or until is golden brown. Let cool over a rack.
Serve: 24 small muffins.
