Dairy Chocolate-Vanilla Dessert



Dairy desserts are always delicious! We create our version with vanilla bean and 80% Callebaut chocolate.





500ml milk
1 large egg yolk, sifted
1 1/2 tbsp cornstarch
200ml condensed milk
30g dark chocolate
1 vanilla bean
200ml double cream


Directions
1. Out from heat, whisk together the milk, egg yolk, cornstarch and condensed milk. Add the chocolate and vanilla seeds, scraped with a non serrated knife.


2. Let to low heat always stirring with a spatula, so the mixture will not burn and make lumps. Cook until make a thick and shiny cream. Let cool for about 10-15 minutes and beat in an electric beater, gradually adding the cream. Beat well. Pour in individuals serving dishes or in a just a large serving dish and let to refrigerate until is cooled. If you prefer, decorate with cherries or strawberries and grated chocolate.


Tips: This dessert is close to the dairy chilled desserts as Shape Delight, but if you don't have any vanilla bean or chocolate, ignore vanilla and use 2 tbsp cocoa powder instead the chocolate.


Serve: 6 small portions.
