Mini Chocolate Chips Cookies

The Portuguese Chocorango got a partnership with a company called Nutrimental. So, they sent to us a products as courtesy. Among them, we receive a breakfast cereal and then we got the idea to bake some cookies with it. 
We create a recipe that is a little bit different from the others that we had tried. The butter is browned previously, releasing all the delicious smell of butter, process that we found HERE. It was really, really yummy that became a keeper!


Ps. The official trier of Chocorango said they were perfect.



120g unsalted butter, in room temperature, divided
2/3 cup sugar
1/2 cup light brown sugar
1 large egg
1 tsp vanilla extract
2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cup chocolate flavored breakfast cereal*


Directions
1. Sift the flour, baking soda, baking powder and salt and mix. Set aside. In a saucepan, let to low heat 60g of butter. When the butter is completely melted cook for 3 minutes, always stirring, until is lightly golden brown. Remove from heat and let cool for 5 minutes.


2. In an electric beater, cream together the another 60g of butter in room temperature, sugar, brown sugar and browned sugar until is light and fluffy. Scrape the bowl and add the egg and vanilla extract. Beat well. Fold in the sifted ingredients and chocolate cereal. Cover the dough with plastic and refrigerate for at least 2 hours.


3. Preheat the oven to 400˚F. Roll the chilled dough into 2cm balls and bake for 10 minutes or just until the cookies start to turn slightly golden around the edges. Let cool over a rack.


Tips: For this recipe we used a Nutry cereal made with oats, wheat germ, cereal flakes and chocolate chips:




If you can't find it, use 3/4 cup oat and 3/4 chocolate chips. You can refrigerate the dough overnight.
