This plain cake is very tender and yummy. For this reason it's perfect to an afternoon snack!
100g butter
1 cup sugar
3 eggs
1 tsp vanilla extract
1 cup milk
2 cups flour
2 tsp baking powder
50g shredded coconut
3 tbsp cocoa powder
Directions
1. Preheat the oven to 350˚F. Grease and flour a 25x11x6cm loaf pan.
2. Cream butter with sugar until is pale and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla extract. Alternately add milk and flour, always beating in low speed. Turn off the beater as soon as the ingredients are ended and fold in the baking powder.
3. Divide the dough in two equal parts and fold in coconut one portion and in the cocoa another part. Pour the coconut batter onto the prepared pan and over it the chocolate batter. Gently, use a fork to give a marble effect to the cake. Bake for about 1 hour or just until a toothpick is inserted in the center comes out clean.
Serve: 10 portions.
