We got in Brazil a cookie made with cornstarch that is named sequilho. And trust us it's really yummy! Even more 'cause Hozana, a very kind grandma helped us.
100g butter, in room temperature
3/4 cup sugar
1 large egg (or 2 small)
1/2 cup cream
1/4 cup flour
4 cup cornstarch
2 tsp baking powder
3/4 cup shredded coconut (optional)
Guava paste (optional)
Directions
1. Cream butter with sugar until is pale and fluffy. Beat well in egg. Beat in cream just until is smooth.
2. Add flour, just 1 cup cornstarch, baking powder and coconut, if you're using. Gradually add the cornstarch until makes a smooth and firm dough, but not stiff. Gently, work the dough but no knead it. If the dough is too floppy and gooey, sprinkle a little more cornstarch and work it. If the dough is too thick, add a little more cream or butter.
3. Make the cookies as you want, with guava paste or not, and place in a non greased cookie sheet. Bake in 350˚F oven for about 20 minutes.
Serve: About 80 cookies.
