LEMON PIE


In holidays, with all family in the house, we can't waste so much time with the dessert. The requirement is something quick, delicious, something that everybody likes. Well, the New Year's Eve is past, but we left here our tip for the next weekend or any special day. Happy 2010 for you, guys!






250g lady finger diagonally cut
200g digestive biscuits
100g butter

Filling
700g heavy cream, very cold
790g sweetened condensed milk
Zest and juice of 4 lemons
1 - 50g package of chantilly mix powder
Fruits to decorate

Directions
Place the lady fingers around a 29cm round pan.
Crush the biscuits in a blender or food processor. Rub in butter. If necessary, add 1 tbsp cold water.
Line the pan with this crumb, pressing very well, but carefully, you don't want to crack the lady fingers. Chill for 20 minutes.

Filling
Beat the heavy cream, condensed milk and zest and juice of lemon just until is a homogeneous and thick cream. Spoon this cream into the prepared pan and chill for more 1-2 hours.
Whisk the chantilly mix following the producer instructions and spread over the lemon cream. Embellish with the fruits and chill for at least to 30 minutes. Remove from pan and serve.

Yield: 20 portions.
