Kiwi-Cherry Crumble Cake

To a delicious and healthy snack, we created a cake enriched with fruits and oats. This cake is so yummy and charming that you can pack and offer to friends.








Crumble
1/2 cup oat
2/3 cup flour
1/4 cup sugar
45g cold butter, cut into cubes


Batter
50g butter, in room temperature
1/2 cup sugar
1 large egg (or 2 small)
1 tsp vanilla extract
3/4 cup flour
1 tsp baking powder
2 kiwis sliced
8 cherry cut in the middle


Directions
Crumble
1. Mix well the oat, flour and sugar. Rub in the cold butter with your fingertips until resembles bread crumbs. Reserve.


2. Preheat the oven to 350˚F. Grease and flour a square pan of 15x15cm.


Batter
3. Whisk the butter with sugar until makes a pale and fluffy mixture. Add egg and vanilla extract and whisk well. Add flour and baking powder and fold gently. DO NOT OVERMiX.


4. Place the batter into the prepared pan and level with a spatula. Sprinkle the fruits over the cake and over it the reserved crumble. Bake for 20 minutes or just until is golden brown. Let cool over a rack.


Tips: You can use strawberries instead the cherries.


Serve: 6 small pieces.
