Oatmeal Plum and Coconut Cookies

These cookies are amazing! Perfect texture, flavor and sweetness. You can bake it and store in a container and serve for any unexpected visitor.

2 cups flour
1 1/2 cup oatmeal
1 cup brown sugar
3 tbsp cocoa powder
2 tsp baking powder 
150g cold butter, cut into cubes
1 egg
1/2 cup chopped plum
1/2 cup shredded coconut

Directions
1. Preheat the oven to 350˚F.

2. In a bowl, mix well the flour, oatmeal, sugar, cocoa and baking powder. With the tips of your finger rub in the butter until resembles bread crumbs. Add the egg, plum and coconut and combine all in a smooth dough. Do not knead the dough.

3. Make 3cm balls with the dough and place onto a non greased cookie sheet. Bake for about 20 minutes and let cool over a rack.

Tips: You can add to the dough chopped Brazil nuts, raisins or chocolate chips.

Serve: About 40 cookies.
