You can. It's just take care with the filling. Boiled eggs, raw tomato, cucumber, lettuce or any leaf are food examples those not freeze very well. So, prepare how much sandwiches you desire, wrap each one separately with a plastic or foil and freeze. Thaw in room temperature.
LOL, I learned the hard way that I can't freeze mayonnaise when I used to take sandwiches to work and try to make them ahead of time.
