CHOCOLATE CHIP, CINNAMON AND BANANA CAKE


Mashed banana, cinnamon and chocolate chip. All these involved in a buttery, light and soft dough. To serve warm or in room temperature is the request for a delicious snack.






100g sweet butter
200g sugar
2 eggs
1 1/3 cup very ripe banana, mashed (about 3 large bananas)
50ml buttermilk
210g flour
1/2 tsp salt
1 1/2 tsp ground cinnamon
1 tbsp baking powder
200g dark chocolate, chopped

Directions
Preheat the oven to 350˚F. Grease a 28x18cm pan. Sift the flour and mix salt, cinnamon and baking powder.
Cream together butter and sugar until pale. Add one egg at a time, beating well after each addition. Add mashed banana and beat a little more. Beat in the sifted ingredients alternately with buttermilk just until incorporate. Gently stir in chopped chocolate.

Cook's tip: You can use good quality dark chocolate chip instead chop the chocolate bar.

Serve: 12 portions.
