PERFECT PANCAKE - READER'S RECIPE

Priscilla, one of our adorable readers, tell us that we MUST to try the pancake recipe that she always bakes. We accept the challenge and now enjoin you, dear friend, to also bake these pancakes. Forget all the other pancakes ever eaten, this is special! So light, so soft, so yummy! Surely we recommend it!









210g flour
2 tbsp sugar
3/4 tsp salt
2 tsp baking powder
2 yolks
250ml milk
3 tbsp melted butter or oil (canola or corn)
1 tsp almond extract
2 egg whites whipped in stiff peaks

Directions
In a bowl, mix flour, sugar, salt and baking powder.
Whisk yolks and milk. Add melted butter or oil and almond extract.
Pour the liquids over the dry ingredients and whisk just until all comes together, DO NOT OVERMIX.
Fold gently in the whipped egg whites. Let batter to rest for 15 minutes.
Heat a skillet, grease with oil (never butter 'cause it burns). Using a cup measure pour into the skillet. Flip the pancake when bubbles appear on the top, DO NOT PRESS DOWN the pancake. Serve warm with toppings (maple syrup, caramel syrup, chocolate, honey) or not.

Serve: 8 pancakes.

  3. Wow, I envy your pancake presentation. I really wish I could make a stack of pancake for my kids, too! But with 4 kids plus a hubby, that's not likely to happen in my kitchen. I'm lucky to have cooked at least one pancake for each of them before they all come running down the stairs! So, a pile of pancakes isn't going to happen anytime soon! Unless I wake up maybe earlier?!? Then it's not really going to happen!!! :)

  4. Hmmm...stiff egg yolks in pancakes! I never would've thought of that. This looks really fantastic. I love the pancake recipe I use, but it does have too much oil. This seems a bit healthier. I'll have to try it. :)

  5. Yummie, the pancakes sure look so fluffy, I never made them with egg white separated from the yolks, I'll definitely try your recipe...thanks!
