MINI STRAWBERRY PIE

Since these mini pies are not too sweet, they're perfect for breakfast or the afternoon snack. They're also delicious as finger food, you grab one mini pie and go, without the need to be by a table with plates, forks and etiquette.








5.3oz all purpose flour
1oz sugar
1/4 tsp salt
2.1oz unsalted butter, cold, cut into cubes
3 tbsp super cold water
Strawberry Filling
2 cups diced strawberries
3 tbsp lime juice
zest of 1 lime
1oz sugar
1 tbsp all purpose flour


Directions
1. In a bowl mix the flour, sugar and salt. Add the butter and mix it with the tips of your finger.
2. Add the water little by little, untill the dough is well incorporated, if necessary add a little more water. Do not knead or work the dough too much. Wrap it in plastic and refrigerate for 15 minutes.
Strawberry Filling
3. Mix the strawberries, zest and lime juice, sugar and flour.

4. cook in low heat for 5 minutes or just untill the strawberries lose some of the water. Let it cool.

Building the pies:
5.Preheat the oven to 355°F.


6. Roll the dough and cut it into circles. Place the dough inside little pans forming a shell, add a little bit of the filling (colled down) and cover the pies with strips of the dough. If you choose to cover the pie, cut some holes on the lid to allow the steam to escape.


8. You can brush the strips with egg yolks and bake for 15-20 minutes or untill the dough is goden brown. Remove from the pans and let it cool in a rack.

Tip: You can also use frozen strwberries for the filling.

Makes: 6 mini pies.
