Red Velvet Cupcake


We always wanted to try a recipe of the popular Red Velvet Cake. So when we saw these pics HERE, we just can't wait anymore. We ran to our kitchen and baked these yummy scarlet cupcakes.

Recipe adapted from the blog Cheiro Doce.

100g unsalted butter in room temperature
1 cup sugar
3 eggs
1 tsp vanilla extract
1 1/4 cup flour
1/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1/4 cup cocoa powder
1/2 cup buttermilk
1/2 tsp red food coloring

Directions
1. Preheat the oven to 430˚F. Sift flour with salt, baking powder and baking soda and cocoa powder. Mix well and reserve. Mix together the buttermilk with food coloring.

2. Cream the butter with sugar until is light and fluffy. Add the eggs one at a time , beating well after each addition. Beat in vanilla extract. Alternately in low speed, add the sifted ingredients and the buttermilk with food coloring. When all ingredients are ended, turn off the beater and fold with a spatula. If necessary, add a little more food coloring. DO NOT OVERMIX THE BATTER.

3. Fill 3/4 of muffin pans and bake in 350˚F oven (decrease the temperature in the baking time). Bake for 20 minutes. Cool completely over a rack. Then its cooled, spread the desired frosting.

Serve: 24 small cupcakes.
