This muffin is delicious but the frosting is the climax! So creamy and so chocolaty!

80g butter
100g sugar
1 tsp vanilla extract
2 eggs
30g semisweet chocolate, melted
190g flour
2 tbsp cocoa powder
2 tsp baking powder

Chocolate frosting
90g milk chocolate
80g semisweet chocolate
130ml cream
4 tbsp icing sugar

Preheat the oven to 350˚F.
Cream together the butter, sugar and vanilla. Add the eggs, one at a time, beating well after each addition. Add the melted chocolate and stir with a spatula. Fold in the flour, cocoa and baking powder.
Spread the batter into muffins cups, leaving about 1 fingers of distance from the border. Bake for about 20 minutes. Let cool on a rack and cover with the chocolate frosting and sprinkles.

Chocolate frosting
Melt the milk and semisweet chocolate and stir in the cream and sugar.

Yield: 12 muffins.

  5. Yum YUM YUMMY. Chocolate cake with chocolate frosting; I used to be crazy for this combo when I was a kid, couldn't get enough of it. And oh, yes, lots of chocolate frosting.
