BAKED SAUSAGE WITH TOMATE, ONION AND POTATO


Simple lunch with a special touch. Goes very well with a fluffy rice and farofa or just a salad.






800g good-quality pork sausage
500g potato
2 medium onions
5 ripe and firm tomatoes
2 tbsp balsamic vinegar
Olive oil
Salt and freshly ground pepper
Fresh basil

Directions
Preheat the oven to 375˚F.
In a skillet, brown the sausage on all sides.
Peel and cut into medium pieces the potatoes and boil for 5 minutes or until is easy to insert a knife in them. Drain.
Place the sausage and potatoes in a roasting pan. Cut onions into medium pieces and place them in the same pan. Drizzle the balsamic vinegar and olive oil and season with salt and pepper.
Bake for about 30 minutes, brushing the sausage, potatoes and onions with grease that is on the bottom of the pan in the middle time.
Seedless and cut the tomatoes into medium pieces, put on the pan, brush with grease and season with salt and pepper. Let to bake again for 10 minutes or until the tomatoes is lightly baked.
Remove from oven, brush one more time with grease and add fresh basil.

Serve: 6 portions.
