LEMON MUFFINS

These muffins are yummy! The dough is very airy and soft. Also it has the perfume and delicateness of lemon.









125g butter, room temperature
125g sugar
Zest of 2 lemons
2 eggs
60ml lemon juice
125g flour
1 tsp baking powder

Directions
Preheat the oven to 350˚F. Line 12  muffin cups with paper muffin cups.
Cream together the butter, sugar and lemon zest until is pale and fluffy. Add one egg at a time, beating well after each addition. Gently fold in the lemon juice, flour and baking powder.
Divide the batter into the prepared muffin cups filling about 3/4 of capacity. Bake for 20 minutes or just until a toothpick is inserted in the center comes out clean.

Yield: 12 muffins.
