BERRY MUFFINS

They are soft and vanilla scent fills the house, these muffins have delicious fillings. We can even play a little game: Can you guess before the first bite what is the filling?





3.5oz. room temperature butter
3oz sugar
2 eggs
1 tsp vanilla extract
2tbsp milk

6.7oz all-purpose flour
2 tsp baking powder


FILLING
3 tbsp black mulberry jelly
3 tbsp raspbery jelly

PREPARATION
1. Preheat the oven to 355°F. Cover you muffin pan with cupcake liners.

2.Cream the butter and sugar. Add the eggs one at the time, beating after each adition. Add the vanilla extract and beat a little more.

3. Add milk, flour, baking powdered and fold gently until combined.


4. Pour a little bit of the batter in each liner, a little bit of both jellies and cover it with a little more batter, leave a little room on top so they have room to expand. 

5. Bake for 25 minutes or until golden brown. Let cool on a wire wrack.


Tip: You can substitute the jelly flavors.


Makes 12 medium muffins
