LEMON CLOUD TEA COOKIES

For who likes chewy cookies, this recipe is perfect. The name says it all: Lemon Cloud cookies. So aromatic, light and fluffy that you really think you're eating a cloud piece.




100g butter, in room temperature
140g powdered sugar
Zest of 1 lemon
Zest of 1 lime
2 large eggs
1 tbsp lemon juice
200g flour
95g cornstarch
4 tsp baking powder


Directions
1. Preheat the oven to 350˚F. Sift flour, cornstarch and baking powder.


2. Beat the butter and sugar for 30 seconds on low speed to mix. Increase the speed and beat until the mixture is pale and fluffy. Add the zests and eggs one at a time, beating well after each addition. Add the lemon juice and beat just until incorporated.


3. Fold in the sifted ingredients, DO NOT OVERMIX THE BATTER. With the help of two spoons, make small balls with the batter and place in a baking sheet. If you prefer, make a crisscross on the top, pressing with a floured fork.


4. Bake for 15-20 minutes, remove from oven and let cool over a rack.


Makes 50 cookies.
