EMBEDDED GAMMON


If spicy, the pork is hugely tasty. Is there something greater than come together all the family in the weekend and remove from oven a gammon full of flavors, moist, surrounded by potatoes and onions? If you don't want to use gammon, choose a good beef cut to roast, following the entire recipe.






1 unsmoked boneless gammon weighing 4-5 kg

Spice
1 large onion cut into 4 pieces
4 large garlic cloves
1 seedless ají pepper
1/2 bunch of parsley
1/2 bunch of chive
4 tbsp salt
Juice of 3 lemons
2 tbsp finely chopped rosemary

To embed
15 garlic cloves
16 seedless green olives
100g bacon cut into cubes
15 onions pickle

Directions
With a knife's tip, perforate the whole gammon.

Spice
In a blender, liquefy the onion, garlic, pepper, parsley, chive, salt and lemon. Then, add chopped rosemary and mix, do not liquefy again.
Spread it over the meat, including the holes.

To embed
In each hole, add one ingredient: garlic, olive, bacon or onion. Place the gammon in a plastic bag with the spice, let marinate for 12 hours in fridge.

To finish
Preheat the oven to 350˚F.
Place gammon in a large roasting pan, cover with foil and roast for 3h to 3h30. Remove foil and sprinkle with the spice in the pan. Serve with potatoes, onions and bell peppers.

Serve: portions to 10-12 persons.

VANILLA COOKIES



Delicate cookies aromatized with vanilla. Embellish, crunchy and yummilicious!








300g flour
100g sugar
1/2 tsp salt
1/2 tsp baking powder
60g chilled butter, cut into small cubes
1 egg
2 tbsp vanilla extract
1 tbsp cream
Drops of food coloring

Directions
Mix together flour, sugar, salt and baking powder in a bowl. Rub the butter with your fingertips. Add egg and mix. Mix in vanilla extract and cream. If necessary, add 1 tbsp cold water to make a soft dough. Divide the dough and color them with food coloring. Do not overmix. Chill the dough for 20 minutes.
Preheat the oven to 350˚F.
Roll out each dough, overlap, roll and slice. Bake for 10-15 minutes until the base is golden brown. Let cool in a rack. Store in an airtight container.

Serve: 60 cookies.

CHOCOLATE ORANGE CAKE


Chocolate goes with everything or almost, we can't deny. Chocolate and orange is a combination very appreciated. So, what about to try this cake? The dough is just like everyone loves: light, soft, melting in your mouth. The filling is a chocolate and orange mousse and the topping very attractive! It's very simple to prepare, but is easier to garnish.






150g butter
150g sugar
4 eggs
1 tsp vanilla extract
260g flour
2 tbsp cocoa powder
1 tbsp baking powder

To sprinkle
80ml orange juice

Filling
70g semisweet chocolate
50g milk chocolate
3 tbsp orange juice
1 tbsp orange zest
2 eggs separated

Topping
2 oranges skinless and sliced
Whipped cream

Directions
Preheat the oven to 350˚F. Sift together the flour, cocoa and baking powder.
Cream butter and sugar. Gradually add the eggs, beating well after each addition. Stir in vanilla extract. Fold in the sifted ingredients. Bake for 40 minutes until a toothpick is inserted in the center and comes out clean. Let it cool in a rack.

Filling
Melt the chocolates and stir in juice and zest of orange. Add the egg yolks one at a time, beating well after addition. Whip the egg whites and fold gently in the mixture.

To Finish
Slice the cake. Sprinkle with orange juice, fill, cover with sliced orange and embellish with whipped cream. Leave in fridge (covered) until to serve.

Serve: 10 slices.

CHICKEN IN COCONUT SAUCE WITH TOMATO AND BASIL


Chocorango is full of ideas for the summer. Today, we brought a very light and flavorful dish made with chicken, coconut milk, tomato and basil. Try it and then tell us what you think.






1 chicken breast
Salt
Juice of 1/2 lemon
Ají pepper diced

Coconut Sauce
Olive oil
1 garlic clove, diced
50ml coconut milk
200g table cream
100g diced tomato
Fresh basil

Directions
Cut the chicken into strips and marinate in salt, lemon juice and pepper. Reserve for 30 minutes.

Coconut Sauce
Fry the chicken and garlic in a little olive oil. Add coconut milk, cream and simmer in low heat until thick. Add tomato and salt if necessary. Add basil and stir gently. Serve immediately.

Cook's tip: Use sweet grape tomato to have a yummier dish.

Serve: 4 portions.

CAN I FREEZE CARROT?

Yes, ma'am! Enjoy the harvest of carrots to buy them with a low price, fresh and good-looking. Choose how they'll be frozen, if into slices, whole, into smalls cubes or shredded. Into slices and whole is recommend to blanch before, boiling the carrots slices for 2 minutes or whole carrots for 5 minutes. Freeze in smalls portions. It doesn't necessary wait to unfreeze, you can put them immediately in the pan.

Durability: 10 months.

STRAWBERRY FROZEN YOGURT


Yummy!! Cold ice cream to chill this summer! With a combination of yogurt and strawberries you can't go wrong! Cool and full of flavor!






150ml water
175g sugar
Zest of 1 lemon
500g strawberry
300ml natural plain yogurt

Directions
Let to boil the water, sugar and lemon zest for 3 minutes. Let to cool.
Make a purée with the strawberries and yogurt, add the boiled water and beat again.
Place in the ice cream maker for 20-30 minutes.
To make it without an ice cream maker, let to freezer and whisk between 30-60 minutes, to have a creamy ice cream, until is froze.

Cook's tip: The frozen yogurt of the pics was made without the ice cream maker.

Serve: 1 liter.
