COTTONY ROLL


This is a very soft, light, really yummy roll. To prepare a sandwich, toast, with melted butter in the roll recently removed from oven.






1˚Step
150g bread flour
150g plain flour
1 tsp instant yeast
2 tbsp milk powder
1 large egg
150g warm water

2˚ Stage
20g plain flour
2 tbsp sugar
1 tsp salt
2 tbsp canola oil
Sesame seed

Directions
1˚ Stage
In the bowl of stand mixer , stir the flours, yeast, milk powder, egg and warm water. Knead with the hook for 7-10 minutes.
Place the dough into a large recipient, cover and let proof for 2 hours in a warm place, about 82˚F.

2˚ Stage
Mix the flour with sugar and salt. Place the proofed dough to stand mixer, add the dry ingredients and the oil and knead again for 7-10 minutes.
Make the rolls and place into a greased pan. Brush with water and sprinkle sesame seed. Let ferment for more 1h30-2h covered with a clean cloth.
Bake in 350˚F oven (isn't necessary to preheat it) for about 30 minutes. Let cool on a wire rack and store in airtight container.

Cook's tip: Add 4 tbsp sugar and replace the salt to 1/2 tsp to make a delicious sweet roll.
The pic's roll was made with only plain flour and no milk powder.
