Banana Chocolate Biscotti

The Chocorango hadn't any biscotti recipe yet 'cause we never tried one. We searched about this italian cookie that is baked twice to keep for a long time and we created our recipe with banana and A LOT of chocolate! We love it! 
From now on we'll have many more biscotti recipes in Chocorango!






1 egg
1 ripe banana, mashed
1/2 cup sugar
50g melted butter
2 cup flour
2 tbsp cocoa powder
1/2 tsp baking soda
70g dark chocolate chips
70g white chocolate chips
70g chopped peanut


Directions
1. Preheat the oven to 350˚F.


2. In a bowl, whisk the egg, mashed banana and sugar just until smooth. Fold in melted butter, flour, cocoa and baking soda to make a smooth dough. In a floured surface, mold 2 rolls (see the picture HERE) and bake for about 20 minutes.


3. When the dough is set, resistant to the cut but not completely baked, place in a cutting board and cut with a serrated knife. Bake again the pieces in the cookie sheet. Let cool over a rack and store in an airtight container.


Tips: To a most accentuate banana flavor you can add chopped dried bananas.


Serve: About 20 biscotti.
