This is a very quick and easy recipe. Perfect for those day that we don't want and have so much time to dedicate to kitchen.
100g butter, in room temperature
3/4 cup sugar
3 eggs
Zest of 1 lime
1/4 cup lime juice
1 cup flour
1 tbsp baking powder
Directions
1. Preheat the oven to 350˚F.
2. Cream butter with sugar until is pale and fluffy. Add the eggs one at a time, beating well after each addition. Beat in lime zest and juice. Gently, fold in the flour and baking powder.
3. Fill muffin pans and bake for about about 25 minutes or until a toothpick is inserted comes out clean. Let cool over a rack.
Serve: 12 muffins.
